Kai Elmas is a hybrid in the dietetics world, a clinical generalist who has also managed the foodservice operations of Australia's largest public hospital room service kitchen.

As the Principal Dietitian of Elmas Dietetics, Kai brings a practical approach to food service and clinical consulting. He understands the logistics, budgets, and staffing pressures that catering managers and clinical leads face every day in the healthcare sector.

Collaborative Care Having spent nearly two years practising in the Northern Territory, Kai has seen firsthand the importance of working alongside Aboriginal and Torres Strait Islander health workers and community members. This experience taught Kai that effective health support must be holistic and partnership-based, honouring the vital connection between culture, community, and wellbeing. Kai is dedicated to providing a culturally safe space where traditional knowledge and modern dietetics work hand-in-hand, ensuring that nutritional support is flexible, respectful, and led by the priorities of the community.

Operational Leadership As the former Dietitian Foodservice Manager at The Prince Charles Hospital, Kai led Australia’s largest public hospital's Room Service model. Kai has also worked in a variety of smaller-scale kitchens, including those providing meals to aged care residents. Having managed high-volume operations and significant budgets, he ensures his Menu & Mealtime Quality Assessments (MMQA) are not just clinically sound, but operationally realistic and focused on better outcomes for residents.

Clinical Versatility With almost a decade of experience across Queensland and the Northern Territory, Kai is a seasoned clinical generalist. From rehabilitation to leading ICU and heart transplant teams, his deep clinical experience enables him to manage even the most complex medical cases safely, effectively, and with a person-centered approach.

Systems & Technical Specialist An expert in Electronic Menu Management Systems (including CBORD), Kai bridges the gap between clinical data and kitchen production. He is experienced in optimising databases and building allergen safety nets, aiming to reduce food waste, ensure resident safety, and improve the facility's bottom line through efficiencies in processes.
